Cottage Cheese Pancakes - PCOS Friendly

High in protein and deliciousness!

Dreaming of a Sunday brunch with pancakes stacked up high and maple syrup dripping down the sides (no just me?!)


My clients often ask me how they can eat their favorite comfort foods for breakfast that will help them feel full and satisfied, and not spike their blood sugars.


In PCOS, we often focus on lower glycemic load foods for breakfast, emphasizing protein to help prevent morning sugar and insulin spikes. Pancakes don't usually fit the bill and so I tried to come up with an option that checks the important PCOS and YUMMY boxes:

✅ High in protein

✅ No refined sugars

✅ Source of fibre

✅ Easy to find ingredients

✅ Has to be fluffy

✅ Has to be delicious!



 

Cottage cheese pancakes

(makes 8)

Ingredients:

1

Banana, medium

1 cup (266 g)

Cottage cheese, 2% low sodium

2

Eggs, large

3/4 cup (187 ml)

Milk

2 tbsp (30 ml)

Canola Oil

3 tbsp (45 ml)

Ground flax seed

1 cup (158 g)

All-purpose flour, unbleached

1 tsp (5 ml)

Baking powder

1 tsp (5 ml)

Baking soda

2 tbsp (30 ml)

Butter (for cooking)


Preparation:

  1. In a large bowl, mash the banana until it is a purée. Stir in the cottage cheese, egg, milk, and canola oil.

  2. Add the dry ingredients to the bowl (flax seed, flour, baking powder, and baking soda). Stir together until it is all mixed in.

  3. Heat up a griddle or cooking pan until it is on medium-high heat. Add a small amount of butter to coat the surface (this prevents the pancakes from sticking).

  4. Pour in about a 1/3 - 1/2 cup of batter for each pancake. It will be roughly the size of your palm (maybe a bit larger).

  5. Let it cook on one side until you start to see bubbles forming (about 2-3 minutes). Flip the pancake over and let it cook fully (about 1-2 minutes)

  6. Serve with nutrient-dense toppings such as nut butter, fresh fruit, greek yogurt and even a bit of maple syrup!
